There are times of the year when we accumulate so much food that we don't know what to do with it. This happens, for example, at the end of summer with tomatoes, peppers, zucchini, and many other vegetables, especially if we have a garden. To use all that food and not have to throw it away, what we usually do is make homemade preserves: ratatouille, roasted peppers, tomato sauce, and much more. This way, we'll ensure these foods stay in good condition for several months, and we'll have food ready to eat at any time of year, even during the off-season.
